I am Ilaria, a food lover since I was a child .. I am a person to whom when it comes to cooking the eyes shine ... I was like that even as a child ... the first to go to the table with the cry "is ready" of my grandmother .She had 96 years old and she had a trattoria in Florence : I grown tasting the authentic Tuscan cook : today I am happy to share all my secrets with people like me that love Italian vintage style to cook ! I welcome you in my home in the north of Tuscany in a hamlet XV dated, with an outstanding view of Apuan Alps where the time seems to stand still, in the village cows wild pass slowly in front of the courtyard, this is a magical place.

What was your inspiration to get into cooking, food and teaching how to cook?

I have been a food lover since I was a child... When I found an incredible ancient building I decided was the perfect place to host people from around the word and share with them the secret of authentic Italian food ... learned mainly by my nonna who owned a restaurant ( trattoria ) in Florence.

What excites you the most about your work?

I am extremely generous and I am inspired by the smiles of my guests when they taste the food we prepare together. But also I am very empathic and I love to create an unforgettable experience crafted on desire of my guests.

How do you select the menu for you classes?

I am fond of authentic Italian recipes so my classes are based on traditional recipes following the season. When is the time of our vegetable garden I decide the menù with the day arvest.

What do you love the most about cooking?

I enjoy being together, talking about the history of food, my nonna recipes or stories about her, drinking a glass of wine together and creating a unique food experience every day. I love to share with my guests the look of Italian cookbooks, especially the one that was used by my 96 years old nonna ! Food is slow... no hurry or stress and many smiles !
